What happens when I hit the 5-repository limit?

On the Free plan, audits will analyze the first 5 repositories in your organization. You will still see full analytics for those repositories. Upgrade to Pro to analyze all repositories in your organization.

Can I cancel anytime?

Yes. You can cancel your Pro subscription at any time from the Billing portal. You will retain access to Pro features until the end of your current billing period.
